Carmel Rolls that you can feel good about serving your family!

In our quest of delicious gluten free foods we created a fun breakfast, that we have ocassionally!  It is very tasty and I usually pair it with some sausage or bacon (for a bit of protein to off set the sugar even though it is naturally sweetened).  A dab of grass fed butter or organic coconut oil on top will also provide some quality fat to off set the sugar as well.  This is a very easy meal, but the dough does have to rise so it takes a little extra sitting/baking time!

You will need a package of Bob's Red Mill Most Wonderful Bread Mix.  I make the bread recipe you find on the side panel of the bag.  I use rice milk instead of cows milk and only 4 full eggs vs. the egg whites it calls for.  Otherwise I make the bread mix as directed.

Get a 9 X 13 glass pan.  Put 1/4 c. of organic coconut oil into the glass pan.  Place it in the oven at 170 degrees, melt completely.  Take pan out of oven, spray sides of pan with oil spray.  Pour 1c. of maple syrup evenly across the bottom of the pan.  Take large table spoons of bread dough and plop it into the coconut oil/maple syrup (on the bottom of the pan).  Place pan in oven at 170 degrees for about 1/2 hour until rolls double in size.  Then turn oven to 350 degrees and bake until golden brown and bubbling!  It will take about another 1/2 hour or so depending on your oven.  Immediately flip rolls out of pan onto a platter or cutting board.  Use a spatula to scrape any carmel left in pan onto rolls.  Allow to cool a moment.  Cut, serve, and enjoy!
