There is nothing like going into the garden and seeing the fruits of your labor! We have been picking Kale out of our garden like crazy and making everything from chips to soup with it. Kale is one of those super foods it is packed full of vitamins and minerals like Thiamin, Riboflavin, Folate, Iron (6% of daily value) , Magnesium, and Phosphorus, Vitamin A, Vitamin C (134% of daily value), Vitamin K, Vitamin B6, Calcium (9% of daily value), Potassium, Copper, and Manganese. What shocked me the most is that in 1 cup of chopped Kale there are 2 grams of protein, who would have thunk that a green could even have protein in it but this store house of a veggie does! As for the Vitamin A, 1 cup chopped contains 206% of daily value , so if you are suffering from a summer cold eat up a bunch of Kale and boost that immune system! (The high vitamin c content will also help kick that cold in a hurry!)

Kale grows like a weed. Just stick the plant in the ground and water it! In a few weeks you can begin to harvest, and the more you harvest the more it grows! So, if you did not grow your own kale, go to a local farmers market and get some for a buck or two to try!
Kale Chips: (Recipe)
Remove Kale from spine, wash and tear into bite sizes.
Put washed Kale into large bowl
Toss in olive oil
Put on a cookie sheet in single layers and sprinkle very lightly with sea salt
Bake in a 350 degree oven until crispy about 10 minutes
